The key to good analog reception is understanding how to manipulate the filter settings, and in some cases the IFX setting. I usually recommend turning the filter OFF for any analog reception. Chuck has a great location that allows him to use preamps without any issues. I would caution in a lot of cases however to be careful. Preamps can make a marginal situation a lot worse. You say you're in the middle of nowhere which is a plus, but does that also mean in relation to strong transmitter...

I don't think you're doing anything wrong. I think the scanner is though. As we ascertained that Somerset is simulcast, and that scanner is not going to work well with such a system unless you can isolate reception to just one of its towers, that's what your problem is, I expect.

Can also do an Anydesk or similar. Obviously the software, a dongle properly installed, a virtual audio cable (VB Cable is free) are required. No reason why it shouldn't work.

I may try building a half wave vertical dipole cut for around 40 MHz for the hell of it and find somewhere decent to hang it to see how that works. Ironically I was monitoring Site 1 with one of my DSD+ setups. I have the CC on 937.750 here as well. It's not as strong as the Con+ CC for site 1, at least here anyway, but it's solid. Will keep eyes and ears on it.
